I eat this salad on fasting days but it can be served as a normal meal at any time because it is quite light and you can even improve it with a little mayonnaise to taste .... I hope you like it!
- 8 pink potatoes,
- 3 carrots,
- 2 green onions,
- 150 gr black and green olives without seeds,
- 2 donuts for vinegar,
- 2 tablespoons mustard,
- 2 tablespoons oil
- salt to taste.

RECIPE PREPARATION Colored salad:
For starters I want to say that I use pink potatoes for this type of salad because it does not crumble by boiling. So let's start with the beginning. We wash the potatoes and boil them in a pot.
Separately, clean the carrot and wash it and put it to boil. After the potatoes have boiled, leave them to cool and then peel them and cut them into cubes and place them in a bowl. After the carrot has boiled and cooled, cut it and place it over the chopped potatoes. Over these add the washed and finely chopped onion, then the donuts and green and black olives. At the end add the salt and the 2 tablespoons of mustard. Here I always have a problem because I like that good and sweet mustard but every time I buy I have bad luck and the mustard is a bit hot ..... for sure next time I will open the lid to taste it even at the risk of being caught , maybe I'll hit the mustard I like.
