The American comfort food spot is one of 3 new restaurants at Mandalay Bay

Citizens Kitchen & Bar the second of three new restaurants at Mandalay Bay in Las Vegas has opened. The American comfort food spot is headed by chef Brian Massie.

Citizens Kitchen & Bar is one of two new restaurants from The Light Group opening this year at the sprawling Mandalay Bay, which encompasses 25 restaurants and bars, three hotels, a casino, and a shopping mall. A third yet-to-be named restaurant serving Japanese food will open later this year. Red Square, a revamped Russian themed bar, opened at the end of 2012.

The creative menu features classic American breakfast, lunch, and dinner items. Signature dishes include the Fatty Melt (a grilled cheese sandwich with tomato, chopped onions, and Citizens’ special sauce), mahimahi fish tacos with guacamole, slaw and chipotle mayo, and Southern fried chicken with jalapeño honey and coleslaw. Sides include smothered and covered tots, corn on the cob, and a pot of baked beans.

For those with a hearty appetite, the restaurant features the Muffaletta Challenge, a gargantuan $135 Italian sandwich for six which is free if one person dares to finish it all on his or her own.

In addition to the restaurant’s two 230-seat casual dining rooms and bar decked out in muted metals and punctuated with antique mirrors and whimsical banquettes, Citizens Kitchen & Bar also features a grab-and-go counter and espresso bar.

The 4,400-square-foot pool will be framed by 70 daybeds, 23 cabanas and 2 bungalows that are all available by reservation. Following The Light Group’s commitment to personalized service, all cabanas come equipped with their own safes, and bungalows feature private restrooms, servers and pools.

As all Light Group venues do, DAYLIGHT Beach Club will feature a creative cocktail menu and delicious beach cuisine that strays from the average pool food. Mandalay Bay is a 43 story luxury resort and casino and complex which includes one of the towers called the Delano. Since January 2020 the property is owned by MGM Growth Properties and The Blackstone Group and operated by MGM Resorts International. The Four Seasons Hotel occupies floors 35-39 and is independently owned. Mandalay Bay has 3,209 rooms and a casino of 135,000 square feet.

Next to the Mandalay Bay is a 2 million square foot Convention Center which opened in June 2003 and the 12,000-seat Mandalay Bay Events Center.

The property was formerly occupied by the Hacienda casino. Circus Circus bought the Hacienda for $80 million dollars in 1995 and closed the Hacienda on December 1, 1996. During construction, Mandalay Bay had a serious problem of the soil sinking beneath the building. The problem was resolved when 536 micropiles, 200-foot-long metal grout filled pipes were each capped with a hydraulic jack below the building.

The resort eventually opened on March 2, 1999 to a fanfair of celebrity entertainers.

Circus Circus changed their name to the Mandalay Resort Group in June 1999.

Another tower opened on December 17, 2003 named THEhotel at Mandalay Bay.

Mandalay Resort Group sold to MGM Mirage now known as MGM Resorts International finally on April 25, 2005.

One of the main features of Mandalay Beach is an 11-acre pool area with three heated pools, a wave pool with connecting pool for small children, and a lazy river that features a small waterfall plus a shark reef aquarium.

The Shops at Mandalay Place feature a 310 foot long shopping walkway that connects to the Luxor. There are 24 restaurants throughout the property.

The one main horrific incident involving Mandalay Bay on October 1, 2017, the shooting at the Route 91 festival, still has many nagging questions beside what has been reported that still need to be answered. How could the tent in the line of fire not show any bullet holes in it?


Why were there no marks seen on the giant pole in the line of fire? It was reported the gunman fired 600 shots in 10 minutes. A shot every second. Who was shooting on the runway as reported by air traffic control? Was the person wearing the red shoes that was escorted through the gambling area by several gunman at the Tropicana the Prince of Saudi Arabia later to be named the new King of Saudi Arabia? Helicopters around the Strip must fly counter clockwise around the Strip and not hover. Both rules were broken. What were the flashes coming out of the helicopters seen from the Route 91 festival? Were fake security guards shooting in the crowd as seen in several photos?


Chickpeas Mediterranean Cafe, Bambu tie for most demerits on Dirty Dining

LAS VEGAS (KTNV) — At Chickpeas Mediterranean Cafe near Flamingo Road and Jones Bouelvard, we got an unexpectedly jovial reception.

"Hi Darcy Spears!" called Manager Alex Moreno as we walked in the door. "We were expecting you!"

Chickpeas got a 27-demerit C grade on its Dec. 5 inspection.

"Everything was just cluttered. Basically wrong timing," Moreno said. "We were really busy. We were short a dish washer."

Being short a dish washer doesn't explain spoiled food like peppers inspectors found in the fridge and flour in dry storage that was speckled with brown and black debris.

"It is what it is," said Moreno. "We have to fix our problems."

Moreno blames the cafe's issues on bad management and says they're using this experience as an opportunity to do better.

Other violations included improperly cooled rice, chicken and hummus, and pizza dough, cannoli and chicken breast that were uncovered in the freezer and had to be thrown out.

There were also bags of frozen chicken thawing in standing water, dirty cutting boards and pots stored on the freezer floor.

"We managed to fix it and we're doing well now. We want to thank the health department for coming in of course, doing their job, and we did ours," Moreno said.

Chickpeas was back to an A grade on Dec. 9.

We got a similarly warm welcome at Bambu on Spring Mountain Road and Wynn.

"For me personally, I don't have a problem even having you guys in here today," said Owner Santy Luang.

Bambu got its 27-demerit C grade on Dec. 2.

"It was just little stuff here and there. But I don't think it was like to where somebody would've gotten sick," said Luang.

Heath inspectors did find expired gelatins in the walk-in cooler dating back to November.

"It was two days past the expiration date," said Luang.

The green jello was two days expired, but the white was nearly a week past its expiration date.

"I just think it was overlooked. Of course, it was overlooked by my staff and I take responsibility for that, but at the same time, I mean, nobody's perfect. It wasn't like it was a month old. You know what I mean?"

Inspectors also found mung beans at an unsafe temperature, employee food and drinks stored above green noodles for customers and a person in charge who didn't have basic food safety knowledge.

"The old owner was running it remotely so I just came in assuming that everyone on staff should know what you are supposed to be doing," said Luang, who took over ownership of the restaurant one month ago.

Bambu is awaiting re-inspection so it still has a C grade.

McDonald's in the Meadows Mall food court was shut down Dec. 2 after inspectors validated a complaint.

A customer who ordered oatmeal, which comes with bagged apples, noticed the fruit was nearly three weeks expired. Health inspectors who went to McDonald's three days after that complaint still found expired diced apples in the fridge.

A routine inspection that same day resulted in an imminent health hazard closure due to no handwashing. The handsink was broken and backed up with dirty water.

McDonald's reopened later the same day with a 3-demerit A grade.

Franchise Owner Brent Bohn sent this statement:

Citizens Kitchen and Bar at Mandalay Bay had an imminent health hazard closure in its back prep area on Dec. 4.

Inspectors found a multi-generational roach infestation behind the dish washing machine.

There were also multiple fruit flies on walls in the same area.

Water on the floor and food debris and residue under the machine was all the invitation the bugs needed.

Inspectors noted that "The wall behind the ware washing machine is not sealed and can be pushed in with (one's) hand."

The roaches had infested the inside of the wall.

That area at Citizens Kitchen was back to a zero-demerit A grade on Dec. 6.

Food Safety and Compliance Manager Eric Smith said food service was not affected. He said inspectors only saw a few roaches and although one is too many, he didn't believe it qualified as an infestation. He said they reconstructed the wall and have not seen any roach activity since then.

Round 1 Bowling and Amusement at Meadows Mall saw its snack bar shut down Dec. 2 for no hot water.

The general manager said they didn't know there was an issue with the hot water until the inspector arrived.

He said she was the first to realize it when she went to wash her hands prior to conducting the inspection.

Round 1 was back to a 3-demerit A grade on Dec. 4.

Prisma, a food truck, was shut down Dec. 8 at an event at Craig Ranch Regional Park. It had no hot water.

In addition to three large pools, a lazy river and 2,700 tons of white sand, there's a 1.6-million-gallon wave pool where the surf's always up. During the summer months, you can hear some of your favorite musicians perform out here at night as part of the Beach Concert series. However, it is temporarily unavailable. And as if that's not enough, Mandalay Bay has two day clubs strictly for adults -- Moorea Beach Club and Daylight, where you can party with 4,999 of your friends.
And for diehard shark fans, there's Shark Reef Aquarium. As its name suggests, this isn't your typical aquarium. It's filled with 15 different species of sharks and other marine predators.
Nightlife venues: Light Nightclub, Foundation Room, eyecandy Sound Lounge, 1923 Bourbon Bar, Rí Rá, Minus 5 and more. But it is temporarily unavailable.

Entertainment Entertainment includes Michael Jackson ONE by Cirque du Soleil and headline acts and concerts in the 12,000-seat events center or on Mandalay Beach and three lounges. The House of Blues live music venue seats approximately 1,500 people and features Santana among the live music performances. However, Entertainment is temporarily closed.

Nightlife Foundation Room, Light, House of Blues and eyecandy. There are also two frozen drink stations on the property with Evening Call located near the resort's show theater. Minus5, Rí Rá, 1923 Bourbon Bar and a Fat Tuesdays are in The Shoppes at Mandalay Place but temporarily unavailable.
