Because it's summer, warm and beautiful, I think a cool cake is a good choice for the weekend, so I also prepared a peach cake with yogurt, flavorful and very easy to prepare, even for those who do not spend much time in the kitchen and maybe they are not very skilled :)
- I used for the countertop:
- 300 gr biscuits
- 150 gr butter (at room temperature)
- For the cream:
- 5 peaches
- 400 gr yogurt 0% fat
- 200 ml fresh
- 4 tablespoons jelly
- 4 tablespoons sugar
Preparation time: less than 60 minutes
RECIPE PREPARATION Peach cake:
Countertop: I passed the biscuits through the robot to crush them, then I put them in a bowl and mixed them well with the soft butter, at room temperature. I then put the butter biscuits in a cake tin, pressed well and refrigerated to harden.
Cream: I cut the peaches into cubes, not very small, I put them in a pan with the sugar and I left them on the fire until they softened well, after I stopped the fire, I added gelatin, I mixed well and I then inserted the blender to obtain a peach puree. I left the puree to cool.
I beat the whipped cream well, I added the yogurt over it, I mixed and then the cooled peach puree. I poured this composition over the biscuit top and put it in the fridge until the 2nd day.
I decorated the cake on the edges with poppy seeds, for contrast and a few slices of fresh peach.
