This slow cooker beef pot roast is not expensive to make but tastes so good. A bowl of love served to the family!

Bretagne, France

8 people made this

IngredientsServes: 4

  • 650g braising steak, cut into good size cubes
  • 2 tablespoons of flour seasoned with salt and pepper
  • 1 tablespoon of oil of your choice
  • 2 large carrots, sliced
  • 1 onion, diced
  • 1 pint of hot beef stock with a teaspoon of mixed dried herbs
  • 1 tablespoon of Worcester sauce
  • 1 tablespoon tomato puree or tomato ketchup
  • 3 large potatoes, sliced about 1cm thick
  • pinch of salt and pepper, to taste

MethodPrep:30min ›Cook:5hr ›Ready in:5hr30min

  1. Toss the steak in the seasoned flour. Heat oil in a frying pan; add beef in batches and brown on all sides. Transfer to the slow cooker.
  2. Add sliced carrots and diced onion to the same pan you cooked the beef. Cook and stir for 1-2 minutes.
  3. Add the stock with herbs, Worcester sauce, tomato puree and any leftover seasoned flour.
  4. Pour this mixture on top of the beef in the slow cooker; top with the sliced potatoes, making sure they are just below the liquid. Sprinkle a pinch of salt and pepper on top and cook for 5 to 6 hours on High.

Tip

If you don't have a slow cooker, cook on the hob at a very low heat for 2-3 hours but check the liquid and add more stock if it looks dry.You could also use a microwave and cook on low for 90 minutes but this will make the dish have much more liquid as the microwave will not allow the meat and vegetables to absorb as much juice.

Best cut of beef to use

Chuck roast is a rich cut of beef from the cow's shoulder and neck area.

It's a cut that is tough and fatty, so it's full of flavor, yet is inexpensive compared to other beef cuts.

An inexpensive, tough piece of meat benefits greatly from a slow and low cooking method, such as braising.

Braising is the best way to break down the roast's collagen and connective tissue and it turns the meat into the most fall apart, fork tender beefy goodness.
