From time to time, if I find a beautiful and unfrozen duck breast, I prepare it for my husband, who likes it very much. It turned out great, a balanced dish. Needless to say, it prepares much faster than you think.

  • 400 gr breast rate -2 pieces
  • 300 gr frozen green peas
  • 200 gr semi-smoked ham
  • 1 orange
  • 2 cloves garlic
  • 4 tomatoes
  • salt
  • ground red pepper

Servings: 2

Preparation time: less than 30 minutes

RECIPE PREPARATION Duck breast with green peas:


  1. The duck breast is passed through a stream of cold water and then swabbed with a paper towel to absorb moisture.

  2. Season the meat with salt and pepper on both sides.

  3. Place the breast in the cold pan with the skin down. Leave it for another 4 minutes from when the released fat starts to sizzle.

  4. Turn the meat on the other side for another 3-4 minutes. Turn the meat carefully without stinging it. If it is pricked, the juices will drain from the inside and it will come out too dry.

  5. Transfer the duck breast to a tray lined with baking paper and bake for 8 minutes at 180 degrees C.

  6. I thus obtained a medium penetrated meat but with reddish skin.

  7. Thaw the green peas and boil it. Rinse with cold water to keep its color.

  8. Cut the ham into cubes. Wash and slice the orange.

  9. Meanwhile, I fried the diced ham in the fat released in the pan.

  10. Also here, lightly slice the orange slices and tomatoes. I drained the fat mixed with a little orange juice which was used as a sauce.

  11. Remove the orange and tomatoes. Add two cloves of finely chopped garlic and boiled green peas. Add a little more water to degrease the pan with the previous tastes. Bring to a boil and the garnish is ready.

  12. Remove the duck breast from the oven and cover it with a piece of aluminum foil. Let it rest for 10 minutes, only then cut it into slices.

  13. This operation will help keep the juices inside.

  14. Serve the duck breast with hot green peas.

  15. Good appetite !!!
