All ingredients must be at room temperature. For the cream, mix the mascarpone with the powdered sugar until you get a homogeneous foam. Separate the eggs, mix the yolks with the mascarpone, mix well.

Separately, beat the egg whites until stiff and then incorporate them into the mascarpone cream. Place the biscuits in the form. Sprinkle the biscuits with compote sauce, not too much so that it doesn't soften too much. Place the cream over the biscuits and even out. Place the second row of biscuits and syrup a little. Put the whipped cream and grated chocolate over them.
