Ingredients
- 1/2 cup warm water
- 1/4 cup apricot preserves
- 1 teaspoon ground ginger
- 3 cups firm-ripe mango, diced
- 2 1/2 cups fresh blueberries
- 1/2 cup fresh raspberries
Directions
In a small bowl, whisk together the water, preserves, and ginger. Mash any large pieces of apricot with a fork. Pour the mixture into a small saucepan and bring to a boil over high heat.
Cook until the mixture is syrupy, whisking occasionally, about 6-7 minutes. Remove from heat and let cool to room temperature. Combine the mango and blueberries in a large bowl. Drizzle with syrup and toss well. Top with the raspberries and serve.

I LOVE me some tacos, but traditional tortilla shells can use up a lot more Points than I’m willing to spend. So I was ecstatic to give these jicama tortilla a try and see if they would make a good alternative to corn or flour tortillas.
Mango Berry Fruit Salad
I love fruit salad because they are just gorgeous and mouthwatering. I love that you can mix up the combinations. Add different glazes and have fun changing it up. Another delicious glaze idea is used in this Lemon Poppy Seed Fruit Salad. I also love the pairing of this honey-orange glaze in this Apple Walnut Salad. This Kiwi Berry Fruit Salad is perfectly paired with a lemon-honey glaze.

Ever since we made the Lemon Poppy Seed Fruit Salad we have been on a fruit salad kick. Don’t get me wrong, we eat fruit all the time. Probably too much fruit, since we have a house full of sugar addicts. My son, Cannon, eats so much fruit we are having tooth enamel issues… not good and very expensive. But considering everything else in the world, it is the last thing I am too worried about.
I love the color of this salad. There is something special about the table when there are bits of color – I like everything else pretty muted. But love the food and some floral greens to dress the table up. Let the food speak the tables love language, not the napkins.
This glaze is tantalizing. And you will be making this for other salads as well. What is great about the glaze is that you probably have everything on hand. The only suggestion I would give is that I love using Tangelo oranges – they have the best tasting, sweet zest. Drooling now and wishing there were leftovers. Enjoy friends! XOXO San

- Sea salt to taste (optional)
Blend or whisk the ketchup ingredients together until smooth. Taste and adjust seasonings as desired.
