My mother prepared them in the simple version, with or without tails, but in a moment of inspiration I told myself that I had to bring an extra flavor.

My father-in-law grills large champignon mushrooms with a few slices of bacon and crumbs of kneaded cheese (sheep's cheese). It's a wonder! This is where my inspiration came from. I thought that not everyone can grill wood or charcoal, so I found the best solution for mushrooms to be a real joy when you see them on the table.

INGREDIENT:

cheese or mozzarella
a few sprigs of parsley

I washed the mushrooms, removed the stalks and let them dry. During this time I cut the ham into small cubes, grated the cheese (or mozzarella) and chopped the parsley.

I filled each mushroom hat with ham, mozzarella and parsley, then I joined two hats together and fixed them with a toothpick.

I put the mushrooms in the beaten egg with a little salt and pepper, then I rolled them in flour and breadcrumbs. Meanwhile, I put the oil in the pan to heat. When it became hot enough, I fried the mushrooms, taking care to brown them evenly, on all sides.

I took them out of the pan and put them on an absorbent napkin, in order to remove the excess oil.

I ate them hot. They are so good. And they are made so simple and fast!
