- 1 large egg, lightly beaten
- 2 cups jarred tomato sauce or Easy Chunky Tomato Sauce
- 1/4 cup olive oil
- 6 ounces mozzarella cheese, preferably fresh, cut into eight 1/4-inch-thick slices
Heat broiler. Combine breadcrumbs and Parmesan in a shallow bowl. Season both sides of chicken with 1/2 teaspoon salt and 1/4 teaspoon pepper. Dip chicken in the beaten egg, then dredge in breadcrumb mixture, turning to coat both sides.
Spread tomato sauce onto the bottom of a 10-by-15-inch baking dish. Heat 2 tablespoons oil in a large nonstick skillet over medium heat. Place 4 chicken cutlets in skillet cook until golden, 1 to 2 minutes on each side. Using a spatula, transfer browned cutlets to baking dish, placing them on top of sauce. Repeat with remaining oil and cutlets.
Top each cutlet with a slice of mozzarella. Broil about 4 inches from heat source until sauce is hot and cheese is melted and lightly browned in spots, 5 to 8 minutes. Serve immediately.

Heat 1 tablespoon of the oil in a saucepan over a medium heat and fry the garlic until soft. Add the tomatoes and gently simmer for 30 minutes.
Preheat the oven to 220C/200C Fan/Gas 7. Lay the chicken breasts in between two sheets of baking paper and bash with a meat tenderiser or rolling pin, until flattened slightly.
Season the breadcrumbs with salt in a shallow bowl or plate. Put the egg in another shallow bowl. Coat the chicken in the egg and then in the breadcrumbs.
Heat the remaining oil and the butter in a frying pan over a medium–high heat. Add the chicken and cook for 5 minutes, or until crisp, turning halfway through.
Put half of the tomato sauce in a shallow ovenproof dish. Lay the chicken on top, scatter with the chilli flakes and cover with the remaining sauce. Top with the mozzarella and cover with a lid or foil. Bake for 10 minutes.
Uncover the chicken and bake for a further 8–10 minutes, depending on the thickness of the breast, until cooked through. Top with the basil and serve.

A few minced garlic cloves
2 jars of your favourite marinara sauce
Gluten-free Italian seasoned bread crumbs
4 fresh mozzarella balls in water
Preheat oven to 430 F. Whisk the eggs, minced garlic, salt, pepper and parsley. Mix in chicken breasts and cover marinate for at least 15 minutes in the fridge but the longer the better. Even overnight if you have time.
When ready to cook put bread crumbs and handful of parmesan cheese in a shallow platter. Dip chicken and lightly cover. Heat olive oil in large frying pan over medium high heat until hot and shimmering.
Cook chicken one side at a time, until golden brown, around 4 minutes per side. Remember you will put in the oven later to melt mozzarella. Place chicken in a baking dish and cover with warmed marinara sauce.
Top with sliced mozzarella. Sprinkle parmesan and chopped basil. Bake for 15-20 minutes.
Mix flour, salt, and pepper together on a large plate.
Dredge flattened chicken breasts in flour mixture. Set aside.
At this time, you can start a pot of water for your pasta. Cook linguine until al dente.
Heat olive oil and butter together in a large skillet over medium heat. When butter is melted and oil/butter mixture is hot, fry chicken breasts until nice and golden brown on each side, about 2 to 3 minutes per side.
Remove chicken breasts from the skillet and keep warm.
Without cleaning skillet, add onions and garlic and gently stir for 2 minutes. Pour in wine and scrape the bottom of the pan, getting all the flavorful bits off the bottom. Allow wine to cook down until reduced by half, about 2 minutes.
Pour in crushed tomatoes and stir to combine. Add sugar and more salt and pepper to taste. Allow to cook for 30 minutes. Toward the end of cooking time, add chopped parsley and give sauce a final stir.
Carefully lay chicken breasts on top of the sauce and completely cover them in grated Parmesan. Place lid on skillet and reduce heat to low. Allow to simmer until cheese is melted and chicken is thoroughly heated. Add more cheese to taste.
Place cooked noodles on a plate and cover with sauce. Place chicken breast on top and sprinkle with more parsley. Serve immediately.

Begin with four to six boneless, skinless, trimmed chicken breasts. And please: do not be afraid of the raw chicken.
I&rsquom actually beginning to believe fear of raw chicken is a diagnosable phobia. I&rsquove seen people run from the room, squirm on the floor, and cry for their mamas.
Place the chicken breasts inside of a Ziploc bag&mdasheither one at a time or, if the bag is gigantic like this one, all at once. Close the seal, leaving about an inch unsealed to allow air to escape.
I put them inside Ziplocs so that when I pound the heck out of them here in a second, microscopic particles of raw chicken will not end up across the room on my computer&rsquos keyboard.
Now THAT would gross me out the door.
Pound the chicken with the smooth side of a mallet.
You want them to be very thin&ndashabout 1/8 to 1/4&Prime thick.
Add the flour to a large plate. Season with salt (mine&rsquos kosher)&hellip

Pour in a good 1/2 to 3/4 cup of wine.
Allow it to heat up and bubble&hellip
Until it turns a deep color and is reduced by half.
Mmmm. This is where the flavor is.
Next, in go the crushed tomatoes!
Stir it together until it&rsquos all combined and allow to simmer over medium heat. The flavors will just keep getting deeper and deeper.
Now add a little sugar. This&rsquoll counteract the acidity of the tomatoes and add a nice flavor balance.
Add some salt and pepper, too, then allow the sauce to cook for a good 20 to 25 minutes, stirring occasionally.
Meanwhile, grate a bunch of Parmesan.
This is the time to break out the good stuff.
After it cooks for awhile, add some chopped parsley to the sauce.
And add just a little Parmesan, just for kicks.
Stir it together, then stand and admire what you have created, for it is good.
Give the sauce a final stir, then carefully place the chicken breasts on top.
Next, completely cover the chicken with Parmesan.
If this is wrong, well&hellipI don&rsquot want to be right.
I repeat that mantra several times a day.
Oh! And hint: if I have fresh basil on hand, sometimes I&rsquoll lay a couple of leaves on my piece of chicken just before I sprinkle on the cheese. Try it sometime.
Now, put the lid on the pan and simmer for a few minutes&hellip

- Meanwhile, start preparing the chicken. We are going to open out the chicken. Lay the chicken on a board. You are going to cut the chicken on the more round side. - Do this for all the chicken breasts. Once you can open out the chicken place a piece of parchment on top and flatten it with a rolling pin or mallet. Then cut the chicken breast in half. Remember to wash your hands after handling raw chicken.
- Add in the courgettes and peppers to the onions and stir. Add a few twists of salt and pepper and the oregano. Stir and soften the vegetables for another 5-7 minutes until they 'wilt'. Then add the 2 cans of tomatoes and stir. (Top tip. If your tomatoes are quite runny and have a lot of liquid add 2 teaspoons of tomato puree) Continue to simmer the sauce for another 10-15 minutes on high heat to reduce to a thick consistency. Stir regularly to avoid sticking.
- On a plate add the Parmesan and on another plate add the egg and whisk lightly. Season the egg with a little salt and pepper. Take one chicken piece. Dip one side in the egg, and then dip it in Parmesan. Prepare all of the chicken the same way and set aside.
- Place a reliable non stick frying pan on the hob and add a tablespoon of oil and a nob of butter. Put it on a medium-high heat. Fry the chicken pieces, Parmesan side down for about 3 minutes until you get a lovely crust from the Parmesan and place the cooked chicken to one side on a clean plate.
- Once your sauce is thick, check the seasoning. Add a little more salt and pepper if needed. Place sauce in a baking dish and position the chicken on top, Parmesan side up. Sprinkle over the mozzarella and bake in the oven for 15-20 minutes on 190 degrees C.
- Serve the dish with carbs or no carbs!
- Top tips. I prefer to use the mozzarella that isn't in water as it adds water to the dish. If you want to use that mozzarella be extra sure your sauce is thick! I like to cook the meal in 2 separate dishes so that I can cook one fresh in the oven another day. It will also freeze well.

How To Make Chicken Parmigiana
The chicken is prepared by first coating a chicken cutlet in a breading and either frying it or baking it until it is golden brown. For those who like a nice thick breading, it is best to dip the chicken cutlet in flour, followed by whisked egg and then finally into the breadcrumbs.
For a thinner breading, you can simply dip the chicken in the breadcrumbs alone and then bake. The breading for the chicken is best when seasoned with common Italian herbs such as basil and oregano. As far as what the best oil to cook the chicken in it, italian olive oil is the winner by far, especially if you are baking the chicken.
Marinara sauce is the next key ingredient for the dish and a nice homemade sauce can’t be beat! Some canned San Marzano tomatoes, a few herbs, garlic and onions and you are well on your way to a perfect sauce. However, if you have a favorite canned tomato sauce you’d like to use, go for it! Pre-made sauce will undoubtedly get you an excellent chicken parmigiana faster.
Cheese is the final significant ingredient, and while it may be tempting to buy a cheaper cheese, splurging for a high-end mozzarella will be worth the extra cost.

To freeze, stack the fillets in a freezerproof container between sheets of baking parchment. Will keep frozen for three months.
To make the sauce, heat the olive oil in a shallow pan and sizzle the garlic for 2 mins. Sprinkle in the sugar and add a splash of the vinegar, then tip in the tomatoes or passata. Add the oregano, season and bubble for 10-15 mins, stirring occasionally until thickened. To freeze, leave to cool completely, then transfer to a freezerproof container (portion it into more than one, if you like). Will keep frozen for up to three months. Defrost overnight in the fridge, then reheat in a pan until piping hot.
Heat the sunflower oil in a large frying pan over a medium heat and cook the breadcrumbed chicken fillets for 3 mins on each side (fresh or from frozen) until golden and crisp. Arrange on a baking tray. Spoon a little of the sauce over the middle of each fillet, and top each with a slice of mozzarella. Heat the grill to high. Cook the spaghetti following pack instructions, then drain and toss with the remaining sauce. Grill the fillets for 3-4 mins, or 1-2 mins more if they’re from the freezer, until the mozzarella is melted and bubbling, then serve.
- Preheat the broiler. Cover the chicken breasts with parchment paper or plastic wrap, and using a meat mallet or a heavy-bottomed pan, pound the chicken until it is uniformly 1⁄4" thick. Season with the salt and pepper.
- Place the egg whites in a shallow bowl. Mix the bread crumbs, Parmesan, and Italian seasoning on a large plate.
- Dip each breast into the egg whites to coat both sides and then into the crumb mixture, patting the crumbs so they fully cover the chicken.
- Heat the oil in a large skillet or sauté pan over medium heat. Cook the chicken for 3 to 4 minutes on the first side before turning. (The crust should be deeply browned and crunchy.)
- Cook for another 2 to 3 minutes, then transfer the chicken to a baking sheet.
- Spoon the tomato sauce over the chicken pieces, then top with the cheese and place underneath the broiler for 2 to 3 minutes or until the cheese is fully melted and bubbling. Serve garnished with basil (if using).
Eat This Tip
Chicken Parm is normally made by shallow frying the breaded meat in a pan, which is exactly what we do here. However, if you want to save time and calories with only the barest sacrifice in flavor, skip the sauté pan and use the oven instead.
