I made this for my son's birthday party. He loves trains and his birthday is in December so I covered the tracks with icing sugar to look like snow! It's also great to make instead of a Christmas cake which most children don't like.

  • 3 eggs, separated into yolks and whites
  • 60g plain flour
  • Sweets to decorate the cake (liquorice, jelly beans, smarties)
  • Various fruit to decorate the cake (raspberries, blueberries)
  • Icing sugar

  1. Preheat the oven to 165 C / Gas 3.
  2. Microwave the chocolate pieces in a glass bowl on maximum power for 1 minute. Add the butter and microwave again for 30 seconds; stir. Add the sugar and mix again. Mix in the egg yolks, one at a time and fold in the flour.
  3. In a deep, clean bowl, whisk the egg whites until stiff. Stir into the cake batter. Pour the batter into in a rectangular mould or greased loaf tin.
  4. Bake in the oven for 35 minutes, then remove from the tin and cool on a wire rack.
  5. Slice into rectangles for the engine and the carriages. Cut up liquorice sticks to make the tracks. Decorate the carriages with fruit or sweets. Sprinkle with icing sugar to make everything look covered in snow.

You’re reading this post right now while you grumble about Valentine’s Day. Being alone and independent is hard enough, but February is a constant reminder of what you don’t have.

You’re at your desk working hard, minding your own business when your coworker puts a giant vase of roses on her desk from her boyfriend.

You’re stopping at the store to pick up cat food and no matter where you look, every end cap is red, pink, and white with hearts everywhere.

You’re walking around downtown and notice all of the couples eating together, laughing and enjoying each other’s company.

I’ve learned over the years how to have a better attitude about being single. The number one lesson is put yourself first. Treat yourself. Be selfish.

My idea of treating myself is with my weakness – dessert. Actually, snacks are my weakness but dessert is a close second.

Have you ever wondered what, fundamentally, scientifically, makes a piece of cake different from a slice of bread or a cookie? Me neither. But now this important, controversial question finally has an answer, thanks to explainable machine learning. (Sort of.)

In machine learning, explainability is the study of how we can make models more interpretable, so that we can understand, at least to some extent, why they make the predictions they do—an improvement from taking the predictions of a deep neural net at face value without understanding what contributed to the model output. In this post, we’ll show you how to build an explainable machine learning model that analyzes baking recipes, and we’ll even use it to come up with our own, new recipes--no data science expertise required.

This project idea comes from Sara Robinson, who works on AI for Google Cloud. In April, she started a storm of pandemic baking, and like any good machine-learning-practitioner-baker, soon turned her modeling skills to baking. She collected a dataset of recipes and then built a TensorFlow model that took in lists of ingredients and spit out predictions, like:

Sara’s model could accurate classify recipes by type, but she also used it to come up with a completely new recipe: something her model deemed to be about 50% cookie and 50% cake—a “cakie.”

Plus, we came up with a new hybrid recipe: the “breakie,” a bread-cookie hybrid (we wanted to call it a brookie, but that name was already taken).

Build an Explainable No-Code Model with ML

For this project, we decided to use a Google Cloud tool called AutoML Tables. It’s a no-code way to build machine learning models on tabular data, like the kind you’d find in a spreadsheet or database. We chose AutoML Tables because it’s both easy to use and just got an upgrade of new, built-in explainability tools like Feature Attribution (more on that in a bit).

Collecting and Preparing Data

To start, we collected a dataset of about 600 baking recipes for cookies, cakes, and breads from the web. (We can’t share the dataset here because we don’t own it, but you can definitely find your own recipe datasets online.) Next, we whittled down each of those 600 recipes to 16 core ingredients:

  • Yeast
  • Flour
  • Sugar
  • Egg
  • Fat (sum of any type of oil)
  • Milk
  • Baking Soda
  • Baking Powder
  • Apple Cider Vinegar
  • Buttermilk
  • Banana
  • Pumpkin Puree
  • Avocado
  • Water
  • Butter
  • Salt

We didn’t include anything else, like cinnamon, chocolate chips, or nutmeg, in our model. The choice of these 16 ingredients was slightly arbitrary, but mainly we were trying to include ingredients that affect texture and consistency and exclude ingredients that don’t affect texture and that might even let the model “cheat.” For example, you could theoretically add chocolate chips to any recipe, but they’re almost never found in bread, a hint we didn’t want our model to learn from.

Oh, speaking of bread: we also made the executive decision to move sweet breads (like pumpkin bread, banana bread, zucchini bread, etc) from the “bread” category to the “cake” category, based mostly on the wisdom of Great British Bake Off judge Paul Hollywood, who said on Instagram that banana bread is most definitely not a bread.

Because recipes give ingredients in all different measurement units—butter could be written in sticks or tablespoons or ounces—we converted all measurement units to ounces (using a very long and unsophisticated if statement).


It's Official! Chocolate Dunkaroos Are Returning

It&aposs easy to have missed it given everything else we&aposve been through since spring 2020, but Dunkaroos are definitely, fully back. The timing couldn&apost be better, really: during a year where the present was less than ideal, why not retreat into nostalgia with a snack that harkens back to the comparatively innocent days of the 1990s?

In order to keep the throwback train rolling, you&aposll soon find a new iteration of Dunkaroos hitting store shelves, perfect for those who straddle both sides of the aisle in the vanilla versus chocolate debate. Coming summer 2021, General Mills will begin offering a Vanilla Cookies and Chocolate Frosting variety of Dunkaroos, bringing together the best of both flavors in one decadent, dippable treat. 

As mentioned, it&aposs been a big time for Dunkaroos, and the revival hasn&apost been limited to the classic combo of cookies and a tiny serving of frosting either. Earlier in 2021, General Mills announced that full-sized cans of Dunkaroos frosting, which you could presumably use to bathe a really big cookie in a whole lot of goodness. The 2020 Dunkaroos revival also inspired a fast-selling beer and a cereal (this is a General Mills product, after all) in addition to vanilla cookie dunkaroos with the classic rainbow-sprinkled vanilla frosting. 

If there&aposs any downside to the announcement, it&aposs that you won&apost start seeing Vanilla Cookie and Chocolate Frosting Dunkaroos show up on the shelves of nationwide retailers until July 2021. But hey, you&aposve already waited nine years for them to come back after getting discontinued in May 2012, so what&aposs another few months at this point? 

Still, you can bet that Dunkaroos will (or at least should) play a starring role in any picnics you have planned for this summer. The taste of post-vax summer is here, and it&aposs chocolate frosting.


Recipe for Chocolate Cake from Scratch

INGREDIENTS:

  • 2 c. white sugar
  • 1¾ c. all-purpose flour
  • ¾ c. unsweetened cocoa powder
  • 1½ t. baking powder
  • 1½ t. baking soda
  • 1 t. salt
  • 2 eggs
  • 1 c. milk
  • ½ c. vegetable oil
  • 2 t. vanilla extract
  • 1 c. very hot water
  • Preheat oven to 350ºF and grease your pans (I used a 9&Prime x 13&Prime but this recipe makes a lot so you could easily use two 9&Prime rounds or three 8&Prime rounds)
  • In a large mixing bowl, whisk together all dry ingredients
  • Add all wet ingredients to dry ingredients and stir until thoroughly combined
  • Pour into prepared pans and bake for 30-35 minutes or until center is set
  • Let cool completely and frost as desired

I&rsquom honestly not a huge cake fan (I always had ice-cream sundaes or pie for my birthday) but in my experience, from-scratch cakes have often tasted drier and less flavorful than cake from the box.

However, for a non-cake-lover, I was pleasantly surprised by the texture and moisture of this from-scratch cake. And although I never mentioned that the chocolate cake was from scratch, I got several compliments on it at Simon&rsquos party (and Simon certainly approved!)

Also, as I mentioned above, this &ldquofrom-scratch&rdquo cake mix makes A LOT more cake than a boxed mix (see photos below of chocolate from-scratch cake versus yellow boxed-mix cake in the same pan).

I certainly don&rsquot anticipate making all future cakes from scratch, but I am happy to know I have a go-to recipe in case I ever run out of the boxed mixes again 🙂

I love this recipe so much. I use 1 oz of dark chocolate instead of milk chocolate and dutch cocoa. I also used Hershey's cocoa and I still liked it. I don't usually have buttermilk in the house, so I used powdered - King Arthur has a great version I keep in my fridge. I use 2 T of buttermilk powder and 1/4 c cool water, and add that to the melted chocolate mixture. I also added a 1/4 t of espresso powder to the melted chocolate. Since I only have one 5" cake pan, I use all the batter in that, and I haven't had any issues. I have been making the cake in my Breville oven and it comes out great, but I have to watch that the top doesn't burn. I just really dislike turning on my oven, especially in warm weather. I didn't try the accompanying icing recipe - about 30 years ago I was given a great devil's food cake/chocolate icing recipe from Gourmet. I lost it along the way and have been trying to duplicate both. Finally found a version of it a few weeks ago and made it with this cake, and it was awesome. (sugar and 1 c cream reduced slightly, butter added with unsweetened chocolate, then the pot is set over an ice bath. It is then beaten and it's the most delicious ever. Only issue is it's temperamental. If it's left on the ice bath too long it hardens, and if the room is warm is softens quickly and is hard to spread on the cake. I iced the cake and put it in the fridge, and then travelled to work with it on the train and it still looked good though. The cake, once refrigerated, becomes dense, but I also think it tastes better the next day).

Great recipe that I plan to use again (over the Martha Stewart Devil's Food Cake Recipe in her cupcake book). The cake is very light and the frosting is the best milk chocolate frosting I've found to date. I used Godiva chocolate and it was quite rich and sweet. Not toothaching-sweet, but pretty sweet. The recipe makes about 10 cupcakes I doubled the recipe and made 21, with plenty of leftover frosting.

This review is for the cake only. I was really hoping that this cake would turn out, as I find good chocolate cake recipes hard to come by. The flavor was good, but the texture was fluffy--almost too fluffy--as the crumbs really didn't hold together when cut and, instead, seemed to crumble everywhere. Almost too airy, not enough substance. I might try it again, as I used dutched cocoa powder with the requisite cream of tartar to make an equivalent to the natural cocoa powder. Should make up for the difference in acidity, but maybe not. Will try again and report back as I'm hopeful/it seems to have potential.

A note on the icing: I wanted to cut down the taste from the sour cream just a little so I added 1/2 cup semisweet chocolate chips, 2-3 Tbs. heavy cream and 1 Tbs. vanilla and it ended up being one of the best I've ever made. Several layers of flavor after you get that first wonderful hit of chocolate. This icing recipe will go into the permanent recipe box!

Excellent. I followed the recipe to the letter. I used Valrhona for everything - Valrhona cocoa and Valrhona Jivara (milk chocolate) in this recipe. It was fantastic.

Made with 6 inch cake pans and baked for 23 minutes. Added half teaspoon of instant coffee to batter giving it a richer color and the final product a subtle flavor boost. Used dark chocolate ganache frosting between layers two and three. Very elegant presentation. This is my go to cake to bring to parties and special occasions. Made whoopie pies with the cake crowns, too.

Don't try use normal cake pans unless you want a very thin cake. It was like a gigantic chocolate pancake. a delicious chocolate pancake. The frosting was great! Made this for a friends birthday and was loved by all. Great for kids although my son pricked his finger on the rose garnish. Remove the thorns!

I only made the cake. will have to try the frosting one of these days! The cake has an amazing texture and came out wonderfully! Moist and rich. I used a high quality cocoa powder from a local chocolatier, so I didn't have trouble with the cake lacking flavor. Now this is my go-to chocolate cake recipe. Also unlike other cake recipes, I doubled the cake to make in larger rounds and had equally as delicious results.

Cake was a mild chocolate cake, and moist. found it wasn't as flavorful as would have liked. The frosting was terrific to work with and to the taste! Will definitely make the frosting again, and again. Use good quality milk chocolate for best results!

I love that this cake and frosting feature MILK chocolate. The milk chocolate is really the star of the frosting, and the sour cream lends a perfect balance. I made both the cake and the frosting exactly as directed (the only thing I didn't do was garnish with a rose), and they were perfect. I wouldn't change a thing, except maybe the quantity: I wanted more!

I just finished icing this cake for my brother's 23rd birthday. I am super pleased with the results. First the batter was super easy to prepare, the cake was light and perfectly chocolatey. Although I can see that if left too long in the oven it could quickly become dry. I did have a bit of a freak out moment while preparing the frosting because, after adding the corn syrup, it turned to a lumpy mess, I decided to add the sour cream anyways and see what happened and the frosting immediately came together into a smooth tangy chocolate delight. I will be using this recipe in the future. My husband has been dipping his spoon into the frosting every time he passes through the kitchen.

I am a box cake kind of girl and it's mostly because every scratch cake I have made are heavy and dry. But, I decided to give this a try anyways and it came out unbelievable good. The only complaint is the frosting is some what bitter but still very tasty. This is a great recipe.

Excellent recipe- not too much cake, not too sweet and nice and chocolatey- used Lindt- next time would use some dark in frosting. The tip for 20mins for frosting good and I put in fridge and perfect.

I highly recommend this recipe as is. My frosting looked just like the photo it is slightly lighter than the cake. I used what I had on hand, Nestle Milk choc. chips (1/6 cup for the cake and 1c + 1/3 c for frosting) and 2% milk (with 1/4 t. vinegar added) instead of buttermilk. Also, I made cupcakes, but I don't recommend if presentation is an issue, as the batter ran over during baking and they came out looking like windswept mushrooms. Nevertheless, they were delicious. I chilled the frosting for 1/2 hr in fridge and it spread nicely. I had an ample amount, so I piled it high on the the 10 cupcakes the recipe made. Definitely a keeper.

I made this cake in normal pans just to avoid buying more pans. So the layers were thin. And then icing I made as directed. Quite an interesting recipe. Needless to say, I like it. Definitely a keeper and one dessert that will disappear quickly.

Made this cake to rave reviews for a birthday! Unlike other reviewers I have no complaints about the icing, in fact that is what I liked the most. Not at all sweet, but nice and chocolatey. Followed the advice of a previous reviewer and used 60% cocoa chocolate bar for the frosting.

Three forks for the frosting, four for the cake. Didn't have a 5" pan, so used mini bundt cake pans, filling 4 perfectly. Considering their smaller size, cut the time down to 10 minutes, resulting in moist perfection. Found 2/3 c of sour cream to be a bit over powering for the icing. Will tweak that in the future. Also used bittersweet instead of milk chocolate for the cake and icing. Will try semi-sweet next time.

Fantastic recipe! I doubled the recipe, baked it in a tube pan and used Lindt milk chocolate. It was amazing. My guests loved it.

To weigh in on the frosting -- if it says milk chocolate, use milk chocolate OR plan on increasing the butter. I recently tried dark chocolate on a Julia Child recipe when it called for milk chocolate and the result was NOT good, and I had to start over with the frosting. So, Bon Appetit staff or fellow bakers -- since the photo indicates use of dark chocolate, how much more butter needs to be added to the frosting recipe if one wanted a darker chocolate frosting? PS -- I ALWAYS read the reviews to these recipes and tend to amend them as a result. So THANK YOU reviewers!

I made this for my boyfriend's birthday in Feb. We had a dinner party with 7 people and it was just the right size (well, we could have fed 8 with it no problem). It is rich and fabulous. I have now made it several more times and have started experimenting with different chocolate. Last time I used Toblerone which was really good. Once I used Green and Black milk chocolate, also good. although the second bar I had picked up had almonds so it looked like it had warts. :)

This cake was absolutely delicious. The cake was very moist and had an excellent chocolate taste. I have read comments about the frosting being to thin to work with. here is a tip make the frosting a day ahead. refrigate the frosting to allow a longer setting time. the frosting will be firm enough to frost a cake and possibly pipe decorations. Remember recipes are guides and can me changed to one's liking and tastes.

This is THE BEST CHOCOLATE cake EVER. the cake is absolutely the moistest I have ever had and finally, a chocolate frosting that is super light and creamy. Truly perfect. And I love that the size is tiny. Because everytime I make it, I am going to eat it in one day, haha.

Chocolate cakes are wide and vary. It&rsquos ingrained in our being, like it was air that we breath. No human being who has any affection towards pastries can deny such pleasures as a chocolate cake.

Yet chocolate cakes weren&rsquot always part of national prides across the world. Partly because cocoa beans weren&rsquot introduced to the world until the Spanish conquered the Americas and brought back a bit of it.

It fell flat on the stomach of common people but not so on the court. People of high birth started to favor the drink partly probably because it was mixed into milk with honey and sometimes vanilla.

It didn&rsquot take long -by medieval standards- until other nations caught scent of the cocoa and it spread across Europe. The fact that the Pope declared it consumable during lent, probably helped greatly though.

The new craze stirred up the slave market and soon plenty of Africans become Americans to replace the dying Americans that couldn&rsquot cope with increased labor requirements and European virus types.

When the industrial revolution cast its eye on the cocoa market, things sped up and improved greatly.

The Dutch soon figured out how to reduce the cocoa natural bitterness and fat content. This Dutch cocoa was made moldable by the English, called Joseph Fray whose name is still borned by chocolates in England. Thanks to Nestle&rsquos milk powder Swiss soon improved upon Frays technique and invented milk chocolate.

When Lindt arrived at the party, he didn&rsquot have much to do only placing the cherry on top or rather scraping it off as conching that is crucial part of chocolate production is.

Soon after perfecting the production process, chocolate was added not only as filling or glaze but as an ingredient with the batter as well. Chocolate cakes as we know of today were born.

Since then plenty of cocoa has been added to cakes in many forms, resulting in different textures and flavors. The best thing about cocoa that it could dodge all the food trends of the ages thanks to its unique properties.

It&rsquos naturally gluten free, dairy free, sugar free and fat is removed during the processing. Only if we were able to live on cocoa alone but unfortunately munching on dry powder isn&rsquot much fun.

Luckily, we can substitute all the additional ingredients that we used to make chocolate cake with something else that suits our actual diet. That&rsquos why no matter where we go in life, we always have a chocolate cake with us, be it simply sugar free chocolate cake, gluten free chocolate cake or as it is now a low carb keto chocolate cake.

This recipe won&rsquot have all sort of bells and whistles or rather filling and frostings. It&rsquos just the base that will provide a perfect fluffy starting point for all the creaminess that we plan to build in the future.

Creating the structure egg whites were beaten then mixed with almond flour resulting in a fluffy sponge cake that in texture closely resembles a simple sponge cake only it won&rsquot dry out as quickly as the oil in almond flour will prevent that.

Other nuts or seeds also can be used as in reality almond doesn&rsquot have role in creating the cake structure due the lack of gluten. Mind that coconut flour can be substituted with almond flour, but additional liquid and eggs will be needed due to the coconut greater moisture absorption properties. A good starting point is to substitute 1 cup of almond flour with 1/4 cup (1 ounce) of coconut flour. 1 egg will also be needed to be added for every 1/4 cup of coconut flour used in addition to the eggs called for in the original recipe.

Ingredients:

  • 7 oz / 200g Almond (ground)
  • 6 large Eggs (separated)
  • 1 teaspoon Baking powder (follow instructions on packaging)
  • 1 tablespoon Stevia or sweetener of choice
  • 2 tablespoon Cocoa powder (unsweetened)

How to make Keto chocolate cake:

  1. Preheat oven to 350°F / 180°C.
  2. Prepare tray with parchment paper.
  3. Grind almond if not in flour form.
  4. Mix ground almond, cocoa powder and baking powder.
  5. Separate eggs and put egg whites in the mixing bowl.
  6. Keep yolks in a cup for later.
  7. Beat egg whites until peaks form.
  8. Add yolks into the egg whites one by one whilst keep beating it.
  9. Mix in the sweetener, baking powder and the almond flour.
  10. Don&rsquot forget the cocoa powder otherwise it won&rsquot be chocolate cake at all.
  11. Pour batter on the prepared tray and put it in the oven for about 45 minutes or until toothpick comes out clean.
  12. When it is baked, leave it on a rack to cool down.
