The best bean soup I've ever eaten! And this is due to the combination of very fragrant greens and suitable for soups, in general, but also due to the smoky taste. Try it! You will surely like it! I have received many praises for her, and my husband asks me to do it as often as possible.

  • 300 g smoked boneless ciolan
  • 300 g sour cream
  • 1 yolk
  • salt, pepper, 2 cubes knorr
  • greens: 5 parsley, 5 larch, 5 dill, 1 thyme, 1 celery

RECIPE PREPARATION Smoked bean soup:

Put the beans in cold water overnight. The next day, the water is changed and boiled over low heat. When it starts to boil, change the water with another hot one and put it back to boil, adding a little salt. We do this operation so that we do not have problems with digestion. After boiling the beans a second time, put another pot of water on the fire, and when it boils, add the smoked ciolan, cut into larger pieces, together with the whole carrots and chopped onions, over low heat. When the beans are cooked, take it with a spatula and put it in the meat pot. Add salt and pepper to taste + vegeta. Leave it on the fire for another 5 minutes, then turn off the heat. Rub the sour cream with the yolk and gradually add it to the soup, stirring lightly. Finely chop the greens and put them in the pot. Serve with green onions or hot peppers and a lot of appetite, after which we serve another round, because we will not be satisfied with one ... :))


How to prepare smoked beans

First of all, we will have to soak the beans the day before. The minimum soaking time is 8-12 hours but depends on the freshness of the grains. The drier and older the bean, the more we will have to leave it in the water.

The next day, put it in a pot with plenty of water and simmer until it starts to soften. It does not have to be completely cooked because it will boil with the ciolan.

We boil the ciolan whole or cut into pieces (as I did), in order to shorten the cooking time. It should not be completely cooked either, it will continue to cook with the beans.

In a pan in which we will make the beans with smoked ciolan, we hardened the chopped onion, carrot and pepper. On low heat, until softened.

I then added the concentrated tomato juice, paprika, salt and pepper to taste.

After two minutes I added the beans, the chopped ciolan, the thyme, the bay leaf and the water in which the ciolan boiled.

I covered the pot and cooked the bean meal with smoked ciolan until all was completely cooked. If the liquid drops too much, you can add the juice from the ciolan.

At the end I added chopped larch. If you don't like it, you can use dill or parsley. Eat beans with hot smoked ciolan, with your favorite pickles or with green or dried onions. Good appetite!
