RECIPE PREPARATION Pizza with green onions:

Countertop: In a bowl sift the flour, add salt, mix, then make room in the center and put the crushed yeast, add warm water and start to mix by incorporating flour, add warm water until you get a homogeneous dough that does not stick. and the oil and knead, then take the dough and toss it on the work surface for about 30 minutes, then let it rise for about 1 and 1/2 hour. In a bowl I put flour, salt and poured hot water little by little mixing with a spoon. Then I formed by hand a ball of dough that I let rest for 15 minutes.

During this time I washed and dried a green onion with an absorbent napkin, then I chopped it into small pieces. I gave the dough the shape of a roll and then I divided it into 12 pieces.

I modeled each piece in the shape of a ball and I stretched it with the twister. Grease the surface with oil (I used olives), sprinkle with chopped onions and roll like pancakes. Then it rolls again, thus obtaining the shape of a snail. We pass over the snail once more with the twister.

Fry the cakes in hot oil on both sides and remove them on absorbent napkins. Serve hot with a spicy or sweet sauce. They are delicious, good appetite!

Method of preparation

Wheat: put all the ingredients in the robot provided with the "S" blade and process well. Spread the composition in a tray of the dehydrator in a thin layer (maximum 0.5 cm), shape it into pizza and portion it into as many slices as you want. Leave to dehydrate for 10 hours at 42 0 C. Halfway through the dehydration process, turn the countertop to the other side.

Cashew mozzarella: drain the cashews and insert them in the robot provided with the tulle in "S", add the rest of the ingredients and process.

Topping: marinate the leafy mushrooms for an hour in a solution made with: 2 tablespoons of olive oil, a tablespoon of lemon juice and a pinch of salt. Cut the pepper into cubes, slice the olives and chop the onion.

Grease the top with cashew mozzarella and add the topping. Serve with sausage sauce.
For topping you can use any combination you like, the possibilities are endless.

450 gr of flour + extra for kneading, 250 ml of boiling water, 1/2 teaspoon of salt, 1 bunch of green onions, 3 tablespoons olive oil, 200 ml oil for frying

We start by putting water in a pot to boil. In another bowl, mix the flour with the salt. When the water reaches boiling point, pour it over the flour. Then mix vigorously with a spatula until the flour absorbs all the water. Let the green onion pie dough cool enough for your hands to hold. Then knead it on the floured board until it comes off its hands. We can use the robot to make our work easier.

Shape the dough into a roll and leave it to rest for 10-15 minutes, covered with a fresh foil. After it has rested, cut the dough roll into 8 approximately equal pieces. With the help of the dough rolling pin, we spread each piece of dough on the floured table, in a thin disk 2-3 mm thick.

With a brush, grease the dough discs on the entire surface with olive oil, sprinkle the slices of green onion and roll them. The rolls obtained are rolled again in the form of a snail, then we spread them lightly with the rolling pin. Heat oil in a pan, and dip 3-4 pies with green onions in it. We brown them nicely on both sides over high heat, so as not to soak in oil.

If we give up the oil, we flatten the pies more and bake them in the hot pan, using a lid to create the effect of the oven. When we turn the pies, we wipe the lid of the pan from the condensation that is created. If we choose to bake the green onion pies in the oven, preheat the oven and bake them for 15-20 minutes at 180 degrees. In any variant we would prepare them, these pies with green onions come out very tasty, crispy on the outside and with the appearance of puff pastry on the inside.

Why do we cry when we cut onions?

Onions are a healthy vegetable, rich in antioxidants and vitamins. But the onion also has its disadvantages: it smells strong and makes you cry when you cut it. The sulfur content, characteristic of both the onion and its relative, garlic, is to blame for the smell.

When we cut onions, the cells from which it is formed & # 8220sparg & # 8221 and release an enzyme called alinase and a sulfur compound. The latter undergoes several transformations, under the action of the alase, until it transforms into a volatile compound, which reaches the eyes in a maximum of 30 seconds. The problem is that this substance in onions is irritating to the eyes.
Its effect can be diminished by immersing the bulbs in cold water for a few minutes before chopping or slicing.

Preparation Baked salmon with grapefruit and green onions

Wash the salmon slices in cold water and wipe with paper towels. The part with the skin grows from place to place (not very deep, maximum 1 cm). Season the salmon well on both sides with sea salt, pepper and a little chili.

• a few olives
• a few canned corn kernels

Mix the yeast with the flour, add water, margarine and a teaspoon of salt and knead like any dough. Spread and place in the prepared tray, greased with a little margarine or oil. The dough is allowed to rise in the pan.

Meanwhile, peel the carrot and onion and grate them. Put to harden in oil with tomato paste and spices. Add a little more water. After it has cooled, spread it on the dough from the tray that has risen, and start decorating the pizza with vegetables: put the chopped olives, mushrooms, corn, peppers and broccoli. Soy cheese is grated on top. Bake for 40 minutes.

Vegetarian Pizza Recipe with Eggplant

• 250 g of flour
• 150 ml of lukewarm water
• 2 tablespoons fresh yeast (or an envelope of dry yeast)
• a little olive oil
• salt and pepper to taste

• a large eggplant
• an onion
• 50 g of tomatoes
• ketchup (or tomato juice)
• 2 cloves of garlic
• olive oil
• oregano, pizza spices
• salt pepper

The dough is usually prepared, like bread, and left in a warm place to rise for an hour.

Meanwhile, cut the eggplant into slices and add salt, then drain in a sieve. Chop the onion and finely chopped garlic and fry in olive oil until the onion becomes translucent. Add the well drained eggplant pieces, chopped tomatoes and your favorite spices. Stir and simmer for a quarter of an hour.

Spread the dough to fit in the pan greased with oil, and grease with a layer of ketchup or tomato juice. Sprinkle a little oregano or pizza spices. Spread the eggplant sauce and bake until golden brown. Serve with a little ketchup.
