Prepare the dough from 300 g flour, 3 egg yolks, salt powder and cream. Knead until you get a homogeneous dough. Divide the dough into 8 equal parts, which we round nicely.
Melt the lard and mix it with the remaining 200 g of flour. We spread each sheet in turn on the 8 parts, over which we put the mixture of flour and lard with the help of a kitchen brush.
We roll each part so that we get 8 rolls, which it puts in the fridge for about an hour.
We take a roll from the fridge and spread it in a thin sheet, on the bottom edge we arrange along the sheet a row of apple jam, then we roll it, close it at the ends and cut the strudel.
Do the same with all the remaining pieces of dough. When ready, place the tray in the preheated oven at 180 degrees for 45 minutes.
Remove the strudel when it has browned nicely, leave it to cool, then powder it with powdered sugar.
