It is an old traditional recipe for preparing poultry, and is known by every housewife in our lands.
This food was not missing at a holiday meal either. It was served at the table with apples or quinces baked in the oven or with SWEET RICE PLATE. Today, times have changed, new, more modern dishes have appeared on the Moldovan's table, but anyway, the taste of the dishes prepared in grandma's time cannot be compared to any food.
- 2 kg of bird legs
- 200 grams of mayonnaise or sour cream
- ground black pepper
- salt

Preparation time: less than 60 minutes
RECIPE PREPARATION Baked marinated thighs:
Wash the thighs, dry them with a napkin all in a row, salt them, pepper them on both sides, and leave them for about 20 minutes. After that, grease them on both sides with mayonnaise (or sour cream) and let them marinate in a saucepan. covered vessel for 24 hours.
The next day, heat the oven to a temperature of 220C. All the marinated legs are spread on a tray with oil and greased again with sour cream (it is better to brown them nicely). Wrap in parchment paper greased with oil, and put in the oven to bake.
Leave this temperature in the oven for the first 10-15 minutes, then lower the oven temperature to 180C, and cook the meat for about 40 minutes. Bake the meat without parchment paper for the last 10 minutes, so that the thighs brown well. Turn off the oven and leave the meat tray in the oven with the door closed for 10 minutes, in order to dry the meat better.
How do we make chicken legs with marinated olives?
Ingredient:
- 6 pieces of boneless chicken legs (about 1 kg)
- 2 tablespoons vegetable oil to grease the pan
- 400 g diced tomatoes in broth
- 350 g marinated olives, the recipe here
- 1/2 teaspoon oregano
- Salt and pepper to taste
Method of preparation:
Preheat the oven to 200 g Celsius.
We thread the thighs, that is, we open them, because when we buy them, most of them are deboned without being completely cut like for a barbecue. Season chicken legs with salt and pepper.
Grease the pan with oil and put the uncorked legs with garlic in it.
Put the tray in the oven for 40-45 minutes, turning them from time to time from side to side.
After a while, put the marinated olives with lemon, oregano, tomatoes in broth over the thighs and bake for another 20 minutes, reducing the temperature to 180 degrees Celsius.
They are ready to serve, tender and fragrant so you can't stop eating.

I would have some remarks that I hope will not be taken lightly: Whoever has Teflon trays no longer has to line them with baking paper and "cilly" is, in fact, "chili". Those who live in a block of flats and do not have the possibility to use a grill can use an old frying pan, in which to cook, under the stove flame, the eggplant and pumpkin slices, without oil.

Baked caramelized chicken legs
These thighs are so good that you lick your fingers up to your elbows and now I'm sorry I did so few, but the days haven't gone by in the bag and I will definitely do them soon. Basically, these are the ones I had left from a barbecue I made with my friends over the weekend.
They are sticky and tasty, tender and fragrant, so I guess you know that moment when the bones and the ends of the bones are pink, that cartilaginous part. They are easy to make, they only require thighs, spices and honey, but the result is truly fantastic! To reduce the preparation time the marinade can be done the day before, and the next day just put in the oven.

Ingredient:
- 6 pieces lower thighs
- 1 teaspoon of smoked paprika
- 1 teaspoon granulated garlic
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Optional cell flakes
- 2 tablespoons honey
- 1 teaspoon hot pepper jam
- 2 tablespoons lemon juice
- 3-4 tablespoons of water
- 3 tablespoons vegetable oil
- 2-3 sprigs of rosemary
- 2-3 sprigs of thyme
Method of preparation:
Preheat the oven to 180 degrees Celsius.
Wallpaper a suitable baking tray with baking paper.
We clean the thighs of any feathers and wipe them well with a paper towel.
We put them in a bowl with spices, honey and hot pepper jam, water, oil, I also put lemon peel, due to the volatile oils it contains and I said it will give it a good aroma, well I did ! Mix them well and let them cool for at least 3 hours.
One hour before putting them in the oven, take them out to reach room temperature.
We put the rosemary and thyme sprigs on the bottom of the tray and on top the marinated thighs.
Put them in the oven for about 40 minutes, turning them 2-3 times.

Ingredient:

- 300 g Greek yogurt
- grated juice and peel from 1/2 large lemon
- 1 tablespoon chili / tabasco juice
- 1 tablespoon za & rsquoatar
- 2 tablespoons chopped mint leaves
- 2 large cloves of crushed garlic
- 4-5 tablespoons olive oil

Method of preparation
Prepare the marinade: mix the yogurt with the lemon juice and peel, the ground pepper and the hot pepper juice (it can also be Tabasco). Put the chicken legs in yogurt.
Add crushed garlic, chopped or broken mint leaves and za & rsquoatar (a mixture of spices prepared especially in the Middle East containing oregano, thyme, sumac and sesame seeds).
Cover the bowl and let the chicken pieces marinate in the fridge for 6-12 hours, then put them in a pan, sprinkle them with olive oil and bake them in the preheated oven at 180 & degC for the first 30 minutes covered, then remove the foil and return them and we will leave them until they turn brown on both sides
